Toasted marshmallow chai

A gently spiced latte with a toasted sweet finish.

Two toasted marshmallows make a festive topping for one mug of spiced black tea latte. Toast them separately under a broiler so the serving mug never needs to go into the oven.

LET’S MAKE SOMETHING LOVELY

Toasted marshmallow chai

An editorial starting recipe, ready for your own taste adjustments. It has not yet been kitchen-tested by Tea Planet.

Ingredients

  • ½ cup / 120 ml water
  • 1 small cinnamon stick / about 2 g
  • 2 cardamom pods / about 0.4 g, lightly cracked
  • 1 black tea bag / about 2 g
  • ½ cup / 120 ml milk or oat milk
  • 2 standard marshmallows / about 14 g

Method

  1. Simmer the water, cinnamon and cardamom in a small saucepan for 5 minutes. Remove from the heat.
  2. Add the tea bag and steep for 3 minutes. Remove the bag, then strain out the spices.
  3. Return the tea to the pan, add the milk and warm gently for 2–3 minutes without boiling.
  4. Meanwhile, place the marshmallows on a small foil-lined metal baking tray. Broil 4–6 inches from the heat for about 30–60 seconds, watching constantly and removing them as soon as golden.
  5. Pour the chai into a mug. Carefully lift the hot marshmallows onto the drink with a spoon, allow them to cool slightly and serve.
