Ingredients

  • ½ cup / 120 ml water
  • 1 black tea bag
  • ½ cup / 120 ml milk or oat milk
  • 1 tbsp / 15 g plain pumpkin purée, not pie filling
  • ⅛ tsp ground cinnamon, plus a little to finish
  • A small pinch of ground ginger
  • 1–2 tsp maple syrup, optional
  • ¼ tsp vanilla extract, optional

Method

  1. Steep the black tea in freshly boiled water for 3–4 minutes, then remove the tea bag.
  2. In a small saucepan, whisk the milk, pumpkin purée, cinnamon and ginger together. Warm gently for 3–4 minutes without boiling.
  3. Whisk the warm pumpkin milk into the brewed tea. Add the optional maple syrup and vanilla to taste.
  4. Pour into a mug and finish with a light dusting of cinnamon. Stir again while drinking if the pumpkin settles.
